Within the farm, in contrast to the old hacienda of the 18th century, our modern winery is designed and built to facilitate all the processes of winemaking and proper conservation of wine. Equipped with the most cutting-edge technology, it allows us to produce in quantity without ever neglecting the quality, wines that our customers demand.

ENOLOGIST

We harvest at the optimum point of ripeness in order to obtain wines that express the personality that results from the terroir and quality of the vineyard. Additionally, Finca el Palacio Winery and Vineyards carry out stringent quality controls of the grapes that will be used for our wines through controls in the field and at the beginning of the harvest. Once in the winery, we are equipped to extract all the aromatic and flavour potential from each varietal.

The winemaking process is something magical.
It combines tradition and knowledge of centuries with the most modern technology in order to achieve unique results. At Finca el Palacio we take care with each process, incorporating the latest advances, so that our wine is better, vintage after vintage.

THE HARVEST

The harvest is a key process. We focus all our attention into this in order to ensure preservation of the wonderful qualities of the raw material, the grape.

This is why we harvest during the night, to ensure that the vineyard and grapes are at the lowest temperature. And within 30 minutes, the grape enters the winery to begin the winemaking process.

TEMPERATURE

To achieve the best expression and best aromas it is important to control the temperature at all times. For this reason, we spray the grapes with dry ice as soon as they enter the winery. Subsequently, maceration or fermentation is also carried out at controlled temperatures.

In order to achieve the optimum transformation of the must into wine, we are equipped with state-of-the-art technology such as refrigerated Ganimede tanks. These enable complete winemaker control over the winemaking process with outstanding results.
